These are the recipes I use every day . . . not just my own, but also my favorites from family, friends, and other sources. It is a continual work in progress as I fine-tune recipes, add photos, and try new things. Please leave your comments so that I can learn from you too!

Apple Spice Muffins

10 oz. apple pie filling
1 large egg
1/4 cup sugar
1 tsp. apple pie spice
3 oz. whipped topping (thawed)
2 cups Bisquick

Crumb Topping:
Mix the following with a pastry blender or forks:
     2 Tblsp. cold butter
     1/3 cup packed brown sugar
     1/3 cup Bisquick
     2 tsp. cinnamon
     1/3 cup oatmeal

Preheat oven to 350 F.

Put apple pie filling in food processor or blender for 20 seconds, or cut into small pieces.

In large bowl, mix together the egg, sugar, apple pie spice, processed pie filling, and the whipped topping.  Add Bisquick and stir 20 times to mix.  Batter will be very lumpy.

Spoon into muffin cups 3/4 full.  Top with crumb topping.  Bake for 20 minutes or until done.

Serves 12
